Determine new line for gallery title

From what I can tell, after adding an "&" symbol the gallery title automatically splits into a new line, for example "Georgia & Martin" automatically becomes
Georgia
&
Martin
However this isn't always suitable for galleries such as "Georgia & Martin Suppliers Gallery" as this splits the lines up unevenly. Another example would be Smith & Jones Family Portraits, it would force this into:
Smith
&
Jones Family Portraits
Being able to determine the new line so it could be:
Smith & Jones
Family Portraits
Would be much tidier
